Cherry Pistachio Snowball Cookies
1 cup (2 sticks) softened butter
1 cup powdered sugar, plus extra for rolling cookies
2 teaspoons vanilla extract
1 tablespoon almond extract
2 1/4 cups flour
1/2 teaspoon salt
2 cups chopped pistachios (unsalted and shelled)
1/4 cup chopped dried tart cherries
1/4 cup drained, stemmed and chopped maraschino cherries
Preheat oven to 375°F. In a medium bowl, cream butter and sugar together until fluffy. Add vanilla and almond extract. Add flour, salt and pistachios to the mixture and gently mix until thoroughly combined. Then fold in cherries. Don’t overmix the dough. Line a baking sheet with parchment paper. Shape dough into 1-inch ball and place on baking sheet, keeping at least 1 inch apart. Bake for 14-16 minutes. Cool for 5 minutes, then roll each ball in powdered sugar. Let balls completely cool, then roll one more time in powdered sugar.
